Beef Stew

Tonight we are eating beef stew for dinner, yum! This is a slight variation of PW's Beef Stew. It would be great served with some delicious homemade bread, but kids have baseball tonight and life is busy!


Beef Stew
1 tbsp coconut oil
1 tbsp butter
1 lb stew meat
1 onion, diced
3 cloves of garlic, minced
6 cups of water
4 tsps beef base
1 tbsp Worcestershire sauce
2 tbsps tomato paste
1/2 tsp paprika
1/2 tsp sea salt
black pepper, to taste
1 1/2 tsp sucanat
5 whole carrots, roughly chopped
5 (fist sized) new potatoes, diced

Heat the oil and butter in a large pot over medium-high heat. Brown meat, set meat aside, cut into bite-sized pieces.

Add diced onions to the pot. Stir and cook for 2-3 minutes until softened, then add garlic for another minute. Pour in the water and add beef base, then add Worcestershire sauce, tomato paste, paprika, salt, pepper and sucanat. Add beef back to the pot. Stir to combine. Cover and simmer for 1 1/2 - 2 hours.

Add carrots and potatoes, then cover and cook for an additional 30 minutes.
